You will need:

  • 150 g. Butter (soft)
  • 200 g. Sugar
  • 100 g. Brown sugar
  • 2 eggs
  • 250 g. Wheat flour
  • 50 g. Protein flour
  • 2 tsk. Vanilla sugar
  • 1 tea spoon baking soda
  • 1 tea spoon fine salt
  • 200 g. Chocolate , dark , chopped
  • 100 g. Hazelnuts, chopped

How to do

Butter and sugar are mixed together with brown sugar and the eggs.

Mix wheat flour, protein flour, vanilla, baking soda and salt. Then it is mixed into the butter-mix.

The chopped chocolate and the chopped hazelnuts are added.

The dough can be placed in the right size on a baking plate with baking paper on. Press them flat. It is also possible to form a ”sausage alike”, and put cold for 1 hour. Then cut pieces of 7-10 mm. The cookies will grow to double size in the baking process.

To be baked in the lower part of the oven 7-10 min. at 190 degrees Celcius. When the cookies are taken out of the oven, they will become flat.

What is Protein flour?

The flour consist of meal worms, which are dried and then blended. Protein content 55%, fat 32%, dietary  fibers 5,8% and no carbonhydrates. The meal worms are mainly feed with organic products and the flour is delivered in a biodegradable paper bag
